Our Equipment Our commercial processing equipment is "user friendly" for new food producers. We provide training on safe and efficient use and cleaning of the units. Most pieces are large enough to produce substantial commercial volumes of product yet small enough to be easily operable and suitable for small test batches. Our equipment includes 2- 40 and 1-60 gallon steam jacketed kettles, 2-15 gallon tilt skillets, semi-automatic labeler, vacuum pack sealer, 3 convection ovens, 20 and 60 quart mixers, proof box, blast freezer, storage freezer and walk-in cooler and several sheet pan racks and pans. As an example of our capacity, it is reasonable to expect that after the initial training phase, a producer could produce at least four kettles of product in a day. This translates to roughly 1620/12 oz. bottles.
